An Anti-Inflammatory Bomb In A Bowl! Cauliflower, Coconut Oil, Turmeric, Ginger, Stew – Amazing!
Today we are going to present you a delicious stew that is full of healthy fats! It is so healthy and tasty, the whole family will enjoy it. If you are not vegetarian, you can add some chicken for extra protein, or tofu if you are a vegetarian.
You will need these ingredients:
• 1 tsp. cumin seeds
• 1 medium head cauliflower, (stemmed and cut)
• 1 medium onion, finely chopped
• 3 ripe tomatoes, finely chopped
• 1 cup chopped kale
• 2 tsp. ginger paste
• 1 jalapeno, (stemmed, seeded and chopped)
• 2 tbsp. coconut oil
• 1 can full-fat, unsweetened coconut milk
• 1 tbsp. coriander powder
• 1 tbsp. cumin powder
• 1 tsp turmeric powder
• 2 tbsp. chopped cilantro
• 1 tsp. sea salt
In a stock pot, first heat the coconut oil. Let it heat on a medium heat for about 30 seconds.
Then add the cumin seed and stir it well. Add the onions and cook it for 1 minute, and then add the tomatoes. Stir it all together and cook for a few minutes, ‘till the tomatoes soften.
This is the easiest step. Add the rest of prepared ingredients and stir together. Then cover the pan and let it simmer for 15 minutes, but stir it every 5 minutes.
This amount is enough for 4 serving bowls. Enjoy! Leftover can be stored and saved for the next day.
